Strawberry Preserves

Today was preserve day strawberry style.  We got busy around noon and finished up about 6 p.m., both doing our own favorite recipes.  Mine is an old-style pectin free recipe full of chunky strawberries, while my sister slices and dices and mushes and uses pectin.  Both are very good and make my whole house smell like strawberries for a long time afterwards.  The breeze blew in through the windows steadily all through the day making this air condition free kitchen pleasant enough.  Tuesday was a trooper--next year she'll be eating strawberries along with us.  We are eager for raspberries and blueberries soon.  Fantastic time.

Lara's Strawberry Preserve Recipe
8 cups strawberries
6 to 7 cups sugar
1/4 cups lemon juice

Slice berries in half.  Add all ingredients to a large pot and bring to a boil over medium heat.  Stir while boiling until gel point is reached {15-25 minutes}.  Add a tablespoon of butter before removing from heat or skim foam before ladling into jars.  Process in hot water bath 15 minutes.  This makes a preserve that is not as gelled as store bought, but is my favorite type of preserve.

Makes about 4 pints.
